Sweet Potato Compost

This recipe is our go-to breakfast. Why? Because it has all the right things for a delicious, sugar-free and healthy-fat breakfast; to feed your body and wake up your brain.
Sweet potatoes are obviously sweet but surprisingly low on the glycemic index. This means you won’t have a blood sugar spike and your body will have a longer lasting fuel.
Avocados and olive oil are full of healthy fats to give you energy and also fuel your brain. Our brains run on fat so you need healthy fat to cure brain fog and improve cognition.
Eggs are a great protein choice because they are not only sustainable, they contain all of the building blocks for life. I like to get eggs from my friends who love their chickens (or ducks and geese).
For Roasted Sweet Potatoes:
2 sweet potatoes
2 shallots or 1 small onion
2 Tbs avocado oil
2 tsp curry powder (or preferred seasoning)
1 tsp salt (fine Celtic)
freshly ground black pepper
For Compost (per serving):
1-2 eggs
Handful of greens (or: arugula, pea shoots, micro-greens)
1/2 an avocado
1 Tbs pepitas (or: pine nuts, sunflower seeds)
1 Tbs extra virgin olive oil
Salt & pepper to taste
Preheat oven to 400.
Line a baking sheet with parchment paper.
Dice shallot and sweet potatoes then toss in a bowl with oil and seasonings. Spread evenly on a baking sheet and roast for 40 minutes.
Once the potatoes are done and cooling - prepare your fried egg. Heat 1 tbs butter (or avocado oil) in a skillet (I like ceramic) then crack and drop in your preferred number of eggs. Season with a bit of salt & pepper and place a lid over the skillet to help cook the white while leaving the yolk a little runny (this will only take a minute or three and once the clear part of the egg turns white, it’s done).
Serve the eggs over the roasted sweet potatoes - top with avocado, greens, and nuts. Garnish with a drizzle of olive oil.
Serve immediately.
Tip: If you like to meal prep, roast the potatoes ahead of time and store in the refrigerator. Make breakfast in 10 minutes by adding the potatoes to your skillet and frying your egg in a hole you make in the center of the potatoes.
